Wellness Cuisine “Mutatio”
"Mutatio"—a Latin word meaning "change"—is the theme of our course dinner designed to rejuvenate you from summer fatigue and boost your vitality for the winter.
This dining experience aims to refresh both your mind and body, encouraging new strength and transformation.
Appetizer: Enjoy a vibrant dish featuring island vegetables rich in dietary fiber with “Vegetable Etouffée and Local White Fish Carpaccio.” Accompanied by a dip made from island tofu and Handama (water spinach), both rich in Vitamin B, essential for fatigue recovery.
Fish Course: Savor grilled local tuna marinated in Kumejima miso, accented with a Kumejima miso sauce and a Nigana (bitter greens) purée.
Main Course: Relish minced chicken breast combined with various mushrooms, shaped into a cylinder, and roasted to perfection. The dish is finished with a rich sauce made from chicken broth and whole grain mustard, and will be offered as a braised version in the spring.
Dessert: Delight in a crème brûlée flavored with Okinawa’s popular “Jasmine Tea.”
